Miau! talam ubi kayu

Bahan-bahan ( Saiz loyang 30 cm )

* 4 cawan ubi kayu siap di parut dan di buang airnya ( anggaran 2 kg
ubi kayu )
* 1 1/2 cawan air gula merah ( 1/2 kg gula merah dimasak dgn 2 cwn air)
* 1 cawan gula pasir
* 3 cawan santan cair

Bahagian Atas
* 4 cawan santan pekat ( 1 biji kelapa )
* 2 sudu kecil garam ( sudu kfc )
* 1 1/2 cawan tepong gandum

Cara-cara

1. Panaskan kukusan.
2. Ubi kayu yang telah di parut, di perah buang airnya dgn menggunakan
tuala bersih.
3. Masukan kedalam loyang. Masukan santan cair, air gula merah dan
gula pasir. Gaul sebati.
4. Kukus sehingga masak.
5. Setelah masak, tekan2 seperti membuat pulut seri muka.
6. Satukan santan pekat, garam dan tepong gandum, kacau sehingga
sebati. JANGAN BLENDER, sebab nanti bila masak kepala dia akan
pecah2. Guna pemukul telor tangan aje..
7. Tapiskan adunan dan tuangkan keatas adunan ubi tadi. kukus selama
30 minit.
8. Buka penutup kukusan, lap wap yang ada di permukaan kuih dengan
tisu..biarkan sebentar dan tutup api..
9. Sejukan..sedia untuk di makan..

Miau! Kuih Tepung Pelita

Bahan-bahan ( 12 cups- bergantung pd saiz bekas )

* 1 cawan tepung beras
* 1 cawan gula
* 5 cawan air
* 4 sudu besar tepung beras(ratakan)
* 1 biji kelapa diperah jadi 4 cawan santan
* 4 helai daun pandan dimesin dgn sedikit air
* sedikit kapur dan sedikit garam

Cara-cara

1. Tepung, air, gula, air daun pandan dan air kapur dibancuh hingga
sebati.
2. Perah santan, masukkan tepung yg 4 sudu tadi dan garam. Kacau
sehingga sebati dan ketepikan.
3. Masakkan tepung yg diadun dan kacau hingga masak dan berkilat.
4. Bila dah masak masukkan dalam acuan yang disukai. Kalau daun
pisang lagi sedap.
5. Masak santan yg diadun tadi dan kacau sehingga pekat.
6. Angkat santan dan curah ke atas tepung yg di dalam acuan tadi.
7. Sejukkan...

Miau! Pulut Udang/ pulut panggang

Bahan-bahan ( 15 batang )

* 4 cawan beras pulut
* 4 cawan santan
* garam secukup masin
* serunding udang secukupnya (lebih kurang dalam 1 mangkok)
* beberapa helai daun pandan
* daun pisang secukupnya ( dalam 4 keping lebar pelepah pisang)

Cara-cara

1.cuci beras pulut dengan air suam
2.masukkan santan+garam+daun pandan
3.tutup dan masukkan dalam microwave - tekan kat 'rice' atau set
sekitar 15mins (kacau setiap 5 mins supaya pulut masak rata),kalau
tradisional kita kukuskan pulut...
4.bersihkan daun pisang dan layur atas api kemudia potong panjang
10inci dan lebar 5inci. Setelah itu ambil sehelai dan sapukan sedikit
margerin di atasnya
5.ambil 2 sudu besar pulut dan letak atas daun pisang
6.ambil 1-2 sudu makan serunding udang letak di tengah2 pulut tadi
7.tutup inti serunding udang dengan temukan kedua2 hujung pulut
supaya tertutup
8.gulungkan daun pisang dengan rapi serta padat dan pinkan dengan lidi
dihujungnya
9.letak atas api dan balik2kan hingga garing
10.makan masa panas-panas... best!

Miau! APAM BALIK

Bahan:
2cwn tepung naik sendiri
1/2 cwn gula
1 biji telur
1/2 camt serbuk penaik
1.5 cwn air
sedikit pewarna kuning

Bahan tabur:
gula
kacang tanah - digoreng & kisar kasar
krim jagung

Cara:
pukul telur & gula sampai kembang. masukkan air,serbuk penaik & pewarna kuning. pukul lagi sampai nampak rata.
masukkan tepung sedikit sedikit, sampai tepung habis. pastikan takde bintil bintil tepung sbl masak.
ok.. panaskan kuali leper, lenser dgn sedikit minyak. tuangkan sesenduk dlm kuali, pastu bile nak hampir masak, letak ler gula, kacang & jagung. lipat..

Miau! Kueh Kapit

Rice Flour
Plain flour
Granulated sugar
Coconut milk
Eggs
Egg yolk
Oil to grease mould

Method
1. Combine the sifted ingredients with sugar
2. Add in coconut milk and all the eggs, stir well.
3. Strain into a bowl
4. Grease a kueh sepit mould by using a piece of muslin cloth dipped into oil. Heat mould over charcoal fire.
5. When hot, pour a little batter onto the mould. Close mould tightly and bake for about 30 seconds on each side.
6. Open mould to check if kueh sepit is golden. Remove and fold into a quarter at once or roll the kueh.
7. Cool and store in an airtight container.

Donut

275gm Tepung Berprotein Tinggi
3gm Garam Halus
35gm Gula Kastor
25gm Fresh Yis
125 ml Susu Segar
30gm Butter
1 biji Telur
serbuk kulit kayu manis dan gula kastor untuk menyalut donut.

Kaedah menyediakan

1. Tepung digaul dan ramas bersama butter sehingga menyerupai serbuk roti
2. Campurkan yis, gula dan telur ke dalam satu bekas
3. Masukkan campuran susu kedalam adunan tepung dan uli sehingga doh tidak melekat ditangan
4. Biarkan doh mengembang 2 kali ganda dari saiz asal
5. Canaikan doh dengan menggunakan penerap donut dan letakkan donut ke atas dulang yang telah ditabur denga tepung
6. Biarkan selama 15 minit lagi sehingga donut kembang sedikit
7. Goreng diatas api serdahana
8. Golekkan donut yang masih panas dengan gula kastor yang telah dicampur dengan sedikit serbuk kulit kayu manis.
9. Sedia untuk dihidang.

Abuk-Abuk

Ingredients:
100 gm sago Biji
150 gm grated Gula Melaka
Fresh Grated Coconut
1 tbsp Sugar
1 tsp pandan essence
Banana Leaves

Procedure
1. Soak the Sago and drain it.
2. Prepared steamer and clean up banana leaves and shape it round and make a cone with it.
3. Combine sugar with fresh grated coconut and sago.
4. Place the combination above in every cones and spoon the Grated gula Melaka and fill back with sago mixed.
5. Close the cone so that can be flat and place it in the steamer. Steam it for 25 minutes.

Kosui/ Palm Sugar Rice Cakes
Ingredients
100 gm palm sugar-roughly chopped
100 ml water
60 gm white sugar
5 tbsp rice flour
2 tbsp tapioca flour
tsp alkali water
50gm young coconut grated
tsp salt

Procedures
1. Place pall sugar and water in a small pan over medium heat. Simmer until sugar dissolves then add white sugar. Stir until dissolved. Strain into a measuring jug and add enough room temperature water to yield a final quantity of 500 ml liquid.
2. Combine the rice flour and tapioca flour together and pour in the cooled sugar syrup and alkali water to form a batter. Strain.
3. Gently heat mixture in a double boiler until it just begins to thicken. Dont allow mixture the mixture to reach the points when it thickens to the texture of custard. Immediately remove pan from the heat.
4. Pour batter into small Chinese wine cups, fillings full. Steam 12-15 minutes over low medium heat.
5. Season the grated coconut with salt. Set aside.
6. Allow cakes to cool completely. Carefully eased out from the cups, placed on a serving plate and each topped with a spoonful of grated coconut.
